“Tehchin Shahroudi” is a delicious traditional dish from the Sistan and Baluchistan province. This dish is unique to the city of Shahroudi and varies considerably from “tehchin” (a dish made with wheat flour) to “poulet térévani” (chicken cooked in a specific way).

Directions
- I prepare the rice as usual and set it aside. ≈ 3 min
- We season the meat with spices and other ingredients (such as spinach or other vegetables I have mentioned). ≈ 2 min
- We also season the bottom of the pot. ≈ 2 min
- Then, a spoonful of rice mixed with the other ingredients is added to the pot. ≈ 3 min
- We add the prepared ingredients for the meat and the other vegetables. ≈ 3 min
- Then, I cover everything with the remaining rice. ≈ 3 min
- Finally, water and oil paint are added, just as with the other rice dishes.
- If you’re preparing this “jeans stew” around 9 am, bring it to a boil and let it simmer for about 1 to 2 hours before serving.
