Directions
- Cut the eggplants into sticks about 1 x 1 x 5 cm in size, salt them, and let them drain for about 30 minutes to remove any bitterness.
- Heat a large pan over medium heat with two or three tablespoons of oil paint, then add the crushed garlic, which should not be peeled.
- Let it cook for a few minutes, then add the drained eggplant.
- Cook for 6 to 7 minutes, stirring constantly, until they are evenly browned.
- Add the chopped almonds and let them toast for one minute.
- Sprinkle the goat cheese into the pan, add the vinegar and honey, reduce the heat, and continue cooking covered for 3 to 4 minutes.
- Serve hot, sprinkled with parsley or mint (oregano and basil also work well). ≈ 2 min
