Directions
- Combine the olive oil, vinegar, and lemon juice. Peel the tomatoes and remove the seeds, then chop the flesh into small pieces and add it to the sauce along with the finely chopped mint. Season with salt and pepper. ≈ 8 min
- Slice the zucchini into 5mm thick rounds. On sheets of aluminum foil, place 4 rounds each, season with salt and pepper. Season the salmon pieces generously with salt and pepper, and place them on top of the zucchini. Spread a thin layer of butter on each piece of salmon, then seal the foil packets and bake in a preheated oven for about 30 minutes.
- Take out the tortillas, place each one on a plate, and serve with the salsa in small bowls. ≈ 2 min
