Directions
- Cook the sweet potato until it is tender, then peel and puree it.
- Mix the sweet potato puree with cornstarch until you have a smooth paste that can be shaped. ≈ 10 min
- The dough should take the form of an oval ball, about the size of a marble. ≈ 10 min
- Bring the dough balls to a boil until they float to the surface, then remove them and let them cool.
- Crush the coconut, then prepare 4 cups of coconut milk. ≈ 4 min
- Reserve 2 glasses of coconut milk. ≈ 3 min
- Cook the remaining coconut milk with palm sugar, lime leaves, and salt until the sugar is completely dissolved and the mixture comes to a boil.
- Next, add a cornstarch solution, and mix until the sauce thickens.
- Add the potato pieces to the sauce and cook for a few minutes.
- Serve with a coconut milk sauce, which should be heated beforehand. ≈ 2 min
