Rose-shaped Italian brioche
An Italian brioche shaped like a rose bouquet: a lemon-flavored dough rolled and filled with butter, sugar, and hazelnuts, then baked in the oven.
The “Torta di Rose” (Rose Cake) gets its name from its shape, resembling a bouquet of roses, despite not containing any actual roses in the recipe. A light, lemon-scented dough is filled with butter, sugar, and hazelnuts, then rolled up.

Directions
- Mix all the dough ingredients together and let it rise for 2 hours in a dark place.
- Spread the dough out into a vaguely oval shape. ≈ 4 min
- Combine the filling ingredients and spread them evenly over the dough. ≈ 4 min
- Roll it up along the short side and cut off pieces every 10 cm. ≈ 10 min
- Arrange the rolls in a greased baking pan, leaving about 2 to 3 cm of space between each roll. ≈ 3 min
- Let it sit for another hour, until the roses begin to touch each other.
- Bake in a preheated oven at 180 °C for 40 minutes.
