The “Rob Polo” of Chiraz is a specialty dish from the Fars province in Iran. The rice is flavored with pomegranate molasses, then topped with caramelized onions, grapes, and walnuts, before being steamed.

Directions
- Finely chop the onions and sauté them. Once they are golden brown, add the grapes and walnuts.
- Boil the pomegranate molasses and sugar together, then add 2 tablespoons of oil paint.
- Boil some water and cook the rice, which has been soaking for a few hours, in the same way as you would for Persian rice (chelo).
- Before the rice is fully cooked, remove it from the heat and gradually pour it into a sieve using a skimmer, adding the molasses and sugar mixture little by little. ≈ 3 min
- Then, return the rice to the pot, and add the remaining molasses and sugar. ≈ 3 min
- Once the rice is covered in steam, place the grapes, walnuts, and fried onions in the center, then let it steam.
- Shortly after, the robot polo is ready to be served. ≈ 2 min
