This risotto deviates slightly from traditional recipes: the soffritto doesn’t include onion. The dried mushrooms, once rehydrated, provide all the necessary aroma.

Directions

  1. Soak the dry roots in a bowl of lukewarm water for 20 minutes.
  2. While that’s happening, melt half of the butter with the bacon in a low, wide saucepan (or use olive oil). Add a quarter of the bouillon cube.
  3. Add the tomato concentrate to color the rice. ≈ 3 min
  4. Pour the rice into the soffritto and cook it for a few minutes over high heat: this step is crucial for the dish to turn out well. ≈ 3 min
  5. Reduce the heat and add 2 ladles of hot broth. Continue to add more as it evaporates, until the end of the cooking time (approximately 30 minutes, depending on the type of rice).
  6. Drain the shrimp and return them to a pan with a drizzle of olive oil, a quarter of a diced onion, and a spoonful of tomato paste. Add a splash of filtered marinade liquid and cook for a few minutes over low heat.
  7. Five minutes before the end of cooking, add the chopped vegetables to the rice and mix well. ≈ 4 min
  8. Once cooked, turn off the heat and, while stirring, add the remaining butter and grated cheese. ≈ 3 min
  9. Cover for 1-2 minutes, season with pepper, and serve. ≈ 2 min
