This tiramisu replaces the mascarpone with very fresh ricotta, resulting in a lighter dessert that is just as creamy. It can be served in individual cups or as a single dish, and is best prepared in advance and chilled before serving.

Directions

  1. Separate the egg yolks from the egg whites, then whip the whites in a separate bowl. ≈ 10 min
  2. In a bowl, thoroughly mix the ricotta with the sugar until you have a smooth cream. Add the egg yolk and continue mixing, pressing the lumps against the bottom of the bowl. ≈ 4 min
  3. If you wish, add the rum or cognac. ≈ 3 min
  4. Gently fold in the beaten egg whites, lifting the mixture to avoid deflating it. The mixture should become light and airy. ≈ 4 min
  5. Prepare 4 high-sided glasses and place 2 coffee-soaked biscuits in each, arranging them against the side of the glass. ≈ 2 min
  6. You can also arrange the biscuits flat in a large dish, soak them in coffee, and then cover them with cream, layering several times. ≈ 3 min
  7. Pour the cream, wait a few minutes, then sprinkle with unsweetened cocoa powder, smoothing the surface of the cream if it becomes uneven. ≈ 2 min
  8. Cover with cling film and place in the refrigerator for 1 to 2 hours.
