Coconut milk and brown sugar rice fritters
Small rice flour and coconut milk doughnuts, deep-fried and then coated in a brown sugar and coconut syrup: a simple and delicious Filipino treat.
These Filipino doughnuts are made with a light batter of rice flour, coconut milk, and shredded coconut. Once fried, they are coated in a thick sauce made with coconut milk and brown sugar.

Directions
- Mix the rice flour and 480 ml of coconut milk. ≈ 4 min
- Once the dough is smooth, add the soft coconut meat. ≈ 3 min
- Using two spoons, form balls approximately 4 cm in diameter. ≈ 10 min
- Immediately immerse them in hot oil and fry them.
- For the sauce, bring 240 ml of coconut milk and the brown sugar to a boil, stirring until the mixture thickens.
- Dip the doughnuts in the sauce or drizzle with sauce. ≈ 10 min
