- We mix the egg yolks with the sugar until we achieve a creamy consistency. ≈ 3 min

- Once the water is hot, place the bowl over the water and constantly stir the cream until it thickens.

- The fruits are washed, then passed through a sieve to obtain 500g of raspberry puree. ≈ 3 min
- Sugar is added, and the mixture is beaten until the sugar is completely dissolved. ≈ 3 min
- We combine the raspberry puree with heavy cream and vanilla cream. ≈ 3 min
- We pour the mixture into an ice mold and place it in the freezer.
