Quiche Tart
Crème tart from the Haute-Marne region, which can be prepared in either a sweet or a savory version, featuring Langres cheese.
Originating from Chaumont, in the Haute-Marne region, “tarte en quemeu” is a custard tart. Today, it is also made with Langres cheese, in both sweet (young cheese) and savory (unaged cheese) versions. Here are the two recipes.

Directions
Sweet cream version
- In a bowl, gently whisk together the sugar, flour, and milk, then add the eggs. ≈ 4 min
- Bring to a boil, stirring constantly to prevent clumping.
- Press the pastry into a tart tin and prick the bottom with a fork to prevent it from puffing up. ≈ 3 min
- Pour the cream over the dough. ≈ 3 min
- Bake in a preheated oven at 180 °C until the cream is golden brown and has risen.
Version in Langres
- In a mixing bowl, whisk together the cheese, flour, cream, and sugar (or salt and pepper), then add the eggs. ≈ 4 min
- Spread the dough in a baking dish and prick it with a fork. ≈ 3 min
- Pour evenly distribute the cheese mixture over the dough. ≈ 3 min
- Bake at 180 °C until the pie is golden brown and puffed up.
