This traditional “galleta” from Olvera, in the province of Cadiz, is prepared for the Monday of Quasimodo. It serves as the base for the “hornazo” (a type of sweet bread).

Directions
- Infuse the anise and lemon zest into the oil paint.
- Let the mixture marinate for a day.
- Grind the almonds with the cinnamon and other spices. ≈ 3 min
- Combine the scented oil paint with the ground almonds, spices, and sugar. ≈ 4 min
- Spread the dough evenly on a square of oiled kraft paper, approximately 20 x 20 cm in size. ≈ 4 min
- Pour evenly distribute the mixture, pour it over the dough. ≈ 3 min
- Sprinkle sesame seeds and sugar over the surface. ≈ 2 min
- Bake until the cake is fully cooked and golden brown.
- Allow to cool before serving or using as a base for hornazo.
