Chicken fund and in-house beef fund
Two homemade stocks, based on bones, onions, carrots, and celery, cooked gently in cold water: chicken stock takes 2 hours, and beef stock takes 4 hours.
A good base is essential for many soups and sauces. Here are two classic recipes, one with chicken, which is lighter, and one with beef, which is more hearty.

Directions
Chicken stock
- Place the chicken bones in a pot of cold water and bring to a boil.
- Once it comes to a boil, skim off any foam that forms, then add the chopped onion, carrot, and celery.
- Add the bay leaf and simmer over medium heat for 1 to 2 hours.
- Filter: the base is ready. ≈ 3 min
Beef broth
- Place the beef bones in a pot of cold water and bring to a boil.
- Once it comes to a boil, skim off any foam that forms, then add the chopped onion, carrot, and celery.
- Add the thyme and bay leaf, then simmer over medium heat for 3 to 4 hours.
- Filter: the base is ready. ≈ 3 min
