- In a pot, combine 10 tablespoons of water, sugar, and cinnamon. ≈ 3 min
- Prepare a chunky jam (this is the consistency where, when you take a small amount between your fingers, you can form a ball). ≈ 10 min
- Whisk together the 11 egg yolks, the whole egg, and the zest powder. ≈ 3 min
- Once the glucose syrup is ready, add the mixture and continue to cook, constantly stirring, until the yolks have thickened.
- Remove from heat and pour the mixture onto a surface covered in sugar. ≈ 3 min
- Knead the dough until it forms a long, rope-like shape, then dust it with powdered sugar. ≈ 2 min
- Cut it into 24 equal-sized pieces. ≈ 8 min
- Shape the small balls by hand, coat them with extra sugar, and place them on parchment paper (also known as baking sheets) or wrap them in cellophane paper. ≈ 3 min
- Allow the dough to rest after it has been prepared before forming the roll.
