The “Jardinera” is a large, festive Philippine casserole. It features a combination of pork, chicken liver, sausage, chorizo, pineapple, grapes, and cheese, all simmered in a tomato sauce and then baked or steamed in banana leaf-lined molds.

Directions

  1. Grease two cake molds. ≈ 3 min
  2. Garnish them with softened banana leaves. ≈ 10 min
  3. In a pan, melt the butter and sauté the garlic and onion.
  4. Add the pepper, meat, liver, sausages, chorizo, tomato sauce, cheese, grapes, pineapple, pickles, and broth.
  5. Bring to a boil and cook for 20 minutes.
  6. Thicken with bread crumbs and flour.
  7. Arrange the hard-boiled eggs, the hot peppers, and the sausages in the two molds. ≈ 3 min
  8. Crack each egg individually and pour them into the molds. ≈ 4 min
  9. Share the cooked meat and distribute it evenly among the molds. ≈ 3 min
  10. Cover with aluminum foil or banana leaves. ≈ 3 min
  11. Bake in the oven at 190 °C (375 °F), or steam for 30 to 40 minutes.
  12. Let it cool completely, then remove from the pan and place on a serving dish.
