Directions
- In a tall, but not overly wide, saucepan, bring salted water to a simmer with a splash of vinegar. ≈ 3 min
- Crack open the shell and place each egg in a cup. ≈ 3 min
- Stir the water with a spoon to create a vortex. ≈ 3 min
- Carefully slide the egg into the water that is at 90 °C. ≈ 3 min
- Cook for an additional two and a half minutes, until the whites are firm.
- Remove the egg with a skimmer and place it on a plate. ≈ 3 min
