“Pizza di mosto cotto” is a traditional dessert originating from the Abruzzo region, between the provinces of Chieti and Pescara, near Ortona. This old recipe uses cooked grape must and olive oil to create a unique dough. The cooking process is done under a lid, which gives the pizza an unmistakable flavor.

Directions
- Heat the must with the oil paint.
- Once it starts to bubble vigorously, pour it over the flour (I recommend doing this several times, always returning the pot with the oil and wort to the heat, so that it continues to simmer).
- Use a wooden spoon, gradually adding all the ingredients. ≈ 3 min
- Continue to work the dough until it reaches a consistency similar to that of crepe batter or gnocchi dough. ≈ 3 min
- Place the dough in a baking dish, shaping it into a round, flattened form, approximately 4 or 5 cm thick. ≈ 3 min
- On the surface, create deep grooves, approximately 1/2 centimetre deep, in a checkered pattern (each square should measure about 3 centimetres on each side). ≈ 3 min
- Bake in a very hot oven (around 200 degrees or slightly higher) until a dark crust forms (this takes about an hour).
- Remove from the oven and immediately cover the dish with 3 or 4 dishcloths, then let it cool in this way for a few hours.
- For cooking under a lid (see above), it is necessary to have lit the fire several hours ago, so that the temperature of the fire is high enough and there are always plenty of embers available. ≈ 3 min
- Before preparing the dough, we will heat the cooking area by placing live coals on the floor of the section of the hearth where the plate with the lid will be placed.
- Once the dough is ready, remove the embers, place the baking sheet in the hearth, put the lid on top, covering it with embers (but be careful not to use too many, as this could cause the cake to burn). ≈ 3 min
- The cooking time is approximately the same as that required with a conventional oven.
- Once cooked, the plate is removed from the heat, wrapped in towels, and allowed to cool down for a few hours.
