Directions
- Without the peeling, cut the turnips into thick slices of about 0.5 cm. ≈ 8 min
- Peel the beet and cut it into quarters, making the slices thinner than those of the turnip. ≈ 8 min
- Prepare the brine separately: 1 level tablespoon of salt per 250 ml glass of warm water. It should be very salty, but still palatable. ≈ 3 min
- Place the turnips and beets in a jar and cover them with brine until they are completely submerged. ≈ 3 min
- Add 1 to 2 tablespoons of vinegar, then add water until the jar is full. ≈ 3 min
- Make sure to close the lid properly. ≈ 3 min
- Leave the jar on the windowsill for about 5 days, with the container placed on a plate: the fermentation process will cause some liquid to spill over. ≈ 3 min
- Open the jar above the sink, taste it, and adjust the seasoning with salt or vinegar if needed. If it’s not ready yet, let it sit for another 1-2 days. ≈ 2 min
