Directions
- Peel the peaches carefully. Cut them into long, 1.5 cm thick slices, guiding the knife towards the pit to save time. The slices should weigh approximately 3 kg. ≈ 8 min
- Prepare the syrup using the sugar and water. ≈ 3 min
- Add the slices to the syrup and place them over the heat for a few moments. ≈ 3 min
- To mix, hold the jar by the sides and shake it gently, without ever inserting a spoon: this will keep the slices intact. ≈ 4 min
- After about 15 minutes, remove from the heat and allow to cool.
- Then, place the pan over medium heat. Repeat several times until the slices are fully cooked: the slices absorb the syrup well without becoming mushy. ≈ 4 min
- Regularly skim off the foam that forms during cooking. ≈ 3 min
- Check for doneness by observing the syrup and slices. Once removed from the heat, add the diluted citric acid in a small amount of water to make the color translucent. ≈ 3 min
