Directions
- First, prepare the broth using the fish heads and two liters of water.
- In the paella, start by sautéing the finely chopped garlic in olive oil, then add the cut squid.
- Next, add the diced tomatoes, then pour in the Pals rice and simmer for a few minutes.
- Finally, add the very hot fish stock.
- After five minutes, we add the ink and adjust the salt. ≈ 3 min
- Add the peeled shrimp after ten minutes. ≈ 4 min
- We cook them slowly over low heat until they are cooked through.
