White rice served with a mixture of mashed eggplant, okra, tomato, and chili peppers, fried onions, and sumbala seeds: a fragrant African dish for 4.
Fouti is a dish from West Africa: white rice served with vegetables cooked in palm oil, then mashed, fried onions, and grilled sumbala seeds (also known as “netetou”). A squeeze of lemon adds a final touch.

Directions
- Pour each pot, pour a generous amount of oil paint. ≈ 3 min
- Add the eggplant, bell pepper, chili pepper, and okra. ≈ 3 min
- Cook the vegetables, and when they start to soften, add the tomatoes. Continue to cook over low heat until everything is tender.
- In a mortar, combine the salt and bouillon cube, grind them together, then add the vegetables and grind everything into a paste.
- Additionally, preheat the oven to 80 °C and bake the sumbala seeds for a few minutes.
- Cook the white rice.
- Heat the oil paint in a pan and add the onion.
- To create an even layer, place the white rice at the bottom of the dish, followed by the mashed vegetables, the fried onion, and finally the sumbala seeds. ≈ 2 min
- Serve with lemon, if you wish. ≈ 2 min
