Orange-flavored gelatin mousse
A fresh orange and cream dessert with egg yolks, set in a mold and unmolded after three hours in the refrigerator.
This Iranian orange dessert combines juice, egg yolks, cream, and gelatin. It is chilled in a mold before being unmolded.

Directions
- Mix the hot water and gelatin, and place it over the steam until it is completely dissolved.
- Warm the orange juice without letting it boil.
- Defeat the yolks by beating them with zest, then add the sugar and whisk until the mixture becomes pale and frothy.
- Gradually pour the warm orange juice over the yolks while whisking vigorously. ≈ 3 min
- Gently whisk the cream to make it smooth, then gradually incorporate the mixture of yolks. ≈ 4 min
- Add the dissolved gelatin and mix well. Lightly grease the mold and place it in the freezer until it is frozen, then pour the mixture into it.
- Allow to chill in the refrigerator for approximately 3 hours, then unmold.
