Russian-style nettle soup

Dandelion soup is traditionally made in the spring, using young, tender shoots. This Russian variation combines it with buckwheat, root vegetables, and dill, and is then topped with hard-boiled eggs and sour cream.

Directions
- Bring the broth to a boil and add the potato, parsley root, celery, onion, bay leaf, and buckwheat. Simmer for 10 minutes.
- Bring 1.5 liters of water to a boil.
- Remove the freshly picked nettles (using gloves), wash them, blanch them, then drain them in a colander, without waiting too long to avoid losing the nettle juice. ≈ 2 min
- Cut the nettle leaves into thin strips using a knife on a cutting board: they no longer sting. ≈ 8 min
- Add the nettles to the broth, along with garlic if you like, and let it simmer for 15 minutes.
- While you’re doing that, cook the hard-boiled eggs, let them cool, peel them, and cut them into quarters.
- Remove the soup from the heat and stir in the dill and lemon juice. ≈ 3 min
- Before serving, garnish with sour cream and segments of egg. ≈ 10 min
