Muttamala is a traditional Malabar dessert made with only eggs and sugar as its main ingredients. The yolks are mixed into a cardamom-flavored syrup, while the whites are steamed.

Directions
- Separate the egg whites from the yolks. Whisk the yolks thoroughly and set them aside. ≈ 4 min
- Bring the water to a boil in a large pot, add the sugar and cardamom, and then let it simmer until the syrup reaches a “thread” consistency.
- Make a small hole in the bottom of a plastic cup and pour the beaten eggs into it. ≈ 3 min
- Carefully drop the yolks into the boiling syrup through the small hole, then wait a few seconds for them to cook.
- Turn off the heat, pour some water into the pot, and then gently remove the egg whites using a sieve. ≈ 3 min
- Repeat the process until all the yolks are used up. ≈ 3 min
- Prepare the meringue according to your preference, using sugar. Pour it into a dish and steam it. Let it cool, cut into pieces, and serve with the egg whites.
