Muri moa is a traditional Bengali sweet, particularly popular during the winter months. It consists of puffed rice coated in palm sugar syrup, then shaped into small, crunchy, and sticky balls.

Directions
- Spread the puffed rice on a large, clean plate, either in the sun or over low heat in a pan, until it is dry and crispy. Puffed rice that is too moist will not work.
- Place the palm sugar and water in a large, deep pot. Cook over medium heat, stirring constantly, until the sugar has melted and the mixture is smooth.
- Turn off the heat. To test the consistency, drop a drop of syrup into a glass of cold water: it should form a small, firm ball under your fingers. ≈ 10 min
- Add the coconut, sesame seeds, and sugar (if using), then stir quickly. Turn off the heat. ≈ 4 min
- Pour: Gently pour the warm soufflé rice into the syrup. Quickly mix with a sturdy wooden spoon to thoroughly coat the rice: the syrup will quickly set as it cools.
- Once the mixture is still warm but manageable, lightly oil your hands. Take small portions and press them firmly between your palms to form balls or bars. Repeat this process with the entire mixture. ≈ 10 min
- Let the moas cool on a clean, dry plate or on parchment paper: they will become firm and crisp.
