Mango chutney with chili peppers (corom chatni)
A fresh and spicy mango chutney: diced unripe mangoes, chili peppers, cilantro, and orange juice, to be marinated in the refrigerator before serving.
This quick chutney highlights a firm, slightly unripe mango. The fresh chili peppers, cayenne, and orange juice add a kick, while the cilantro or mint provide a refreshing touch.

Directions
- Place the mango on a flat surface and cut along its tip to create a slit. Stand it upright on its base and detach the flesh from one side of the pit, along with the skin, as close to the pit as possible. Turn it over and repeat on the other side. ≈ 3 min
- Place each half skin-side down, and cut the flesh to the skin, in squares of about 1 cm. Hold one half in each hand and turn the skin outwards by pushing with your fingers, so that the cubes stand out. Separate them with a knife.
- Place the mango dice in a small bowl. Add the chili pepper, cilantro, cayenne pepper, orange juice, and salt, then gently mix with a spoon. ≈ 4 min
- Let it marinate in the refrigerator for 1 to 2 hours before serving.
