Manchegan fritillas are thin, leavened pastries, deep-fried in sunflower oil and generously sprinkled with sugar. The dough is prepared in two stages, with a one-hour resting period.

Directions
- In a bowl, pour in the warm water and dissolve the yeast. Gradually add the strong flour and the wheat flour, and knead until a smooth, elastic dough is formed. ≈ 10 min
- Remove the dough from the bowl and cover it with a cloth for 1 hour.
- Once the dough has rested, return it to a bowl, create a well in the center, and add the beaten eggs, milk, and oil paint. Knead, first with a mixer if necessary, then by hand, adding the flour until the dough becomes elastic again.
- Form small balls, about 75g each, and stretch them until they are very thin. ≈ 10 min
- Heat a large amount of sunflower oil in a pan and fry the pancakes until they are golden brown.
- Once the oil paint has dried, generously sprinkle it with sugar. ≈ 2 min
