Directions
- Preheat the oven to 200 °C.
- Grease a 12-cup muffin tin. ≈ 3 min
- In a large mixing bowl, sift together the flour, sugar, poppy seeds, zest, lemon extract, baking powder, baking soda, and salt. ≈ 2 min
- In a separate bowl, combine the milk, oil paint, yogurt, and egg. ≈ 4 min
- Add the dry ingredients to the liquid mixture in three portions, without overworking the dough. ≈ 4 min
- Divide the batter evenly among the muffin cups and bake for 15 minutes, or until the muffins are golden brown.
- While cooking, prepare the glaze: whisk together the powdered sugar and lemon juice until you have a smooth consistency. ≈ 4 min
- Muffins are done when they spring back to the original shape when touched, and a knife inserted into the center comes out clean. ≈ 3 min
- Frost them and sprinkle with almonds, if you like. ≈ 2 min
- Let it cool for 10 minutes on a wire rack, then remove from the pan.
