Lagaccio biscuits are traditional, unique biscuits originating from the Lagaccio district in Genoa. They are also known as “health biscuits” in the Ovada region. The recipe is distinguished by the addition of a small amount of anise-based liqueur.

Directions

  1. Mix the starter with the water. Add 300g of flour and begin to knead. Continue to gradually add the sugar and the remaining flour until you have a smooth, even dough. ≈ 10 min
  2. Then, add the softened butter, one spoonful at a time, making sure it is thoroughly incorporated. ≈ 3 min
  3. Mix the salt and incorporate it into the dough. ≈ 4 min
  4. Allow the dough to rise for 4 hours at room temperature of 20 °C.
  5. Divide the dough in half and let it rise for another hour.
  6. Bake the cookies in the oven at 180 °C for 30 to 40 minutes, then let them cool on a wire rack for 12 to 24 hours.
  7. Cut the cookies into crescent-shaped slices, approximately 3 cm thick. ≈ 8 min
  8. Bake the cookies at a medium temperature (120/140 °C) until they are lightly golden.
