Directions
- Wash, peel, and grate the kohlrabi. Place it in a saucepan, cover with boiling water, and cook for 20 minutes over medium heat.
- Prepare a white roux by mixing flour and a small amount of oil paint, then add it to the soup. Towards the end, season with salt, add dried herbs and pepper, and then let it simmer for another 5 minutes.
- Once the soup is ready, stir in the sour cream in which you have whisked the egg yolk, and then sprinkle with finely chopped parsley. ≈ 2 min
