A traditional Sulawesi treat: small tubes made from a mixture of rice flour and egg, deep-fried, and then coated in a thick sugar syrup and dried.
Kalo-kalo is a traditional snack from Baubau and the Buton Islands, in Sulawesi. The rice flour dough is shaped into small tubes, deep-fried, and then coated in sugar syrup. A crunchy snack that is perfect to enjoy with a cup of tea.

Directions
- Dry-fry the rice flour for 5 minutes, without letting it brown, then let it cool.
- Mix it with boiling water until you have a paste that clumps together and can be shaped.
- Add the egg and mix thoroughly. ≈ 4 min
- Salt to your liking. ≈ 2 min
- Spread the dough on a board, then cut it into 5 cm square pieces. Bring two opposite corners together to form a small tube. ≈ 8 min
- Fry until the tubes are dry.
- Let them cool completely, then coat them evenly with a thick sugar syrup, stirring to coat. Allow to dry.
