Directions
- First, thoroughly wash and clean the squid, then drain them. ≈ 8 min
- Next, lightly rub the fish with salt, turmeric powder, and a pinch of chili pepper, and let it marinate for 10 minutes.
- This will help to eliminate the smell of raw fish and give them a beautiful golden color when pan-fried.
- In a pan, heat some mustard-colored oil paint.
- Fry the marinated fish pieces until they are lightly golden.
- Be sure not to overcook the fish, as it will continue to cook in the sauce.

- Sauté the onion over medium or low heat until it becomes golden brown in color.

- Add this mixture to a pan and cook, stirring constantly, until the spices are well incorporated and the oil has released.

- When the spices begin to release their oil and separate from the sides of the pan, it means that the cooking is complete.
- Then, add tomato slices and a moderate amount of fresh chili peppers (whole or chopped). ≈ 3 min

- Once the tomatoes have softened, add hot pepper juice (or lemon juice), salt, and sugar to taste. ≈ 3 min

- Once the fish have been removed, do not stir or whisk the pan excessively, as this could damage the mixture.
- Hold the pan firmly and gently stir to incorporate the spices.
- Cook the fish over medium to low heat for 10 to 12 minutes, with the lid on.
- Meanwhile, the spices will thoroughly infuse the fish and cook it completely.
- Open the lid once, and spread the fresh chili peppers and chopped cilantro evenly over the top. ≈ 3 min
- This will enhance the flavor of the dish. ≈ 3 min
- At the end of the cooking process, a beautiful, reddish-orange layer of mustard-infused oil paint will form on top. ≈ 3 min
