Directions
- Lightly toast the rice flour in a dry pan, then knead it with warm water to create a soft dough that is neither too dry nor too wet.
- Combine the shredded coconut and palm sugar, stirring over low heat until the mixture is slightly dry. ≈ 4 min
- Separate small portions of dough and flatten them into round discs. ≈ 10 min
- Place a small amount of filling in the center of each disc, then fold the two sides over to form a shell shape. You can use a mold to help with this. ≈ 3 min
- Cook the pithas covered over low heat, or steam them.
- Serve them hot, with thick coconut milk. ≈ 2 min
