Directions
- Peel the Jerusalem artichokes and cut them in half. ≈ 8 min
- In a large saucepan, melt the butter and add two tablespoons of olive oil. Add the onion and cook for two minutes.
- Add the Jerusalem artichokes, white wine, bay leaf, and enough water to cover. Bring to a boil, then reduce heat and simmer until the Jerusalem artichokes are tender, about an hour.
- Meanwhile, cut the lemon into thin slices. ≈ 8 min
- Add the mushrooms, garlic, thyme, lemon slices, and three tablespoons of olive oil to the pan. Cook for another 20 minutes. Serve hot.
