Directions
- Combine the tapioca starch, cassava flour, shredded coconut, and salt in a large mixing bowl. ≈ 4 min
- Thoroughly mix these ingredients. ≈ 4 min
- Add 1 glass of water and knead until a smooth dough forms. ≈ 10 min
- Take a banana leaf and shape it into a cone, or fold it as you like. ≈ 10 min
- Place 2 tablespoons of dough, then put a slice of palm sugar in the center, and cover with a little more dough. ≈ 3 min
- Wrap it securely and secure the end with a skewer or toothpick. ≈ 3 min
- Heat a steamer until the water boils.
- Steam the iwel-iwel for 35 to 45 minutes over medium heat.
- Remove them and serve them warm. ≈ 2 min
