Globe artichoke prepared in the Brindisine style
Globe artichokes, violets, stuffed with breadcrumbs, olives, capers, and mint, cooked in parchment paper on a potato slice.
A recipe from Puglia: each artichoke, opened and filled with a mint, olive, and caper filling, is cooked in parchment paper on a thick slice of potato. It is then served closed, still in its paper wrapping.

Directions
- Prepare the globe artichokes: cut off the stem and remove only the outermost layer of leaves. ≈ 8 min
- Prepare the filling: mix the breadcrumbs (1 tablespoon per 2 artichokes), chopped onion and garlic, chopped olives, mint, capers, oil, salt, pepper, and chili flakes. For a more intense flavor, add 4 anchovies, chopped. ≈ 4 min
- On a square of aluminum foil, place a 1 cm thick potato slice, then an artichoke heart, with its leaves spread out, to fill it with the filling. ≈ 10 min
- Close the plastic wrap to prevent the vegetables from drying out. ≈ 3 min
- Bake in a preheated oven at 200 °C (392 °F) for 30 minutes. Open the parchment paper and use a fork to check if the potato and the artichoke heart are cooked through.
- Serve the globe artichokes in their closed wrapping, or in a shallow dish. ≈ 2 min
