Mouse-shaped cookies, small, deep-fried biscuits coated in sugar
Indonesian-style small, mouse-ear-shaped cookies: a flour and sticky rice-based dough, deep-fried and then coated in a sugar syrup.
Kuping tikus is a traditional Indonesian biscuit, similar to elephant ears but much smaller. The dough is fried and then coated in syrup, resulting in a crispy and sweet treat.

Directions
- Whisk the eggs until they are light and frothy.
- Mix the tapioca starch and glutinous rice flour together, then sift finely. ≈ 4 min
- Gradually incorporate the flour mixture into the beaten eggs, always sifting. Then, mix until a smooth, elastic dough is formed. ≈ 4 min
- Roll out the dough to a thickness of 1/4 inch. Cut out squares that are 3 cm in size, then cut them diagonally to form triangles. ≈ 8 min
- Gently fold one corner of the dough inwards and press the fold to secure it. ≈ 3 min
- Place the triangles in still-wet oil paint. As they expand, gently stir until cooked, then remove and drain. ≈ 4 min
- Boil the sugar with the water until it dissolves to create a syrup.
- Dip the fried biscuits in the syrup and stir to ensure that the entire surface is evenly coated. ≈ 4 min
- Remove them, let them cool, and then serve.
