Directions

  1. Soak the chickpeas overnight and change the water three times.
  2. Broad beans add lightness to the falafel; you can substitute them with a medium-sized potato. ≈ 3 min
  3. Process the chickpeas and broad beans twice in a food processor until they form a smooth puree. ≈ 3 min
  4. Add the onion and garlic, then chop them again (a food processor is convenient, but chopping by hand gives a better result). ≈ 8 min
  5. Add the spices, salt, pepper, and yeast (the dish is quite spicy), and mix well. ≈ 4 min
  6. If the mixture is too thick, add 1 to 2 tablespoons of water. ≈ 3 min
  7. Let it rest in the refrigerator for about 1 hour.
  8. Fill the falafel molds, submerge them in hot oil, reduce the heat, and fry them, turning frequently to ensure even cooking. ≈ 3 min
  9. Serve the falafel with 3 tablespoons of red sauce, 1 tablespoon of white sauce, plenty of hot pepper, and 3 tablespoons of tamarind juice. ≈ 2 min
