Directions

  1. Whisk the eggs in a bowl, separating the whites from the yolks. ≈ 4 min
  2. This will result in a smoother and more even surface. ≈ 3 min
  3. Add sake, sugar, and salt. ≈ 3 min
  4. Mix the ingredients until you achieve a smooth and uniform texture, but be careful not to over-mix, as this can cause bubbles to form. ≈ 4 min
  5. If bubbles form, allow the mixture to rest for 2 to 3 minutes so that the bubbles can dissipate.
  6. Dissolve the cornstarch in water until you have a consistency similar to a paste, then add this paste to the egg mixture.
  7. Heat a frying pan over medium heat.
  8. If you are not using a non-stick pan, lightly oil the surface.
  9. Pour the 3 or 4 tablespoons of egg (approximately 40 to 50 millilitres) into a pan all at once.
  10. Use the whisk to evenly distribute the ingredients into a thin layer.
  11. Allow the ingredients to cook until the edges begin to turn golden brown, then remove the pan from the heat.
  12. Cook the remaining eggs for an additional 30 seconds, using the residual heat from the pan.
  13. Stir the scrambled eggs and return the pan to the heat for 30 seconds.
  14. Remove the scrambled eggs from the pan and let them cool.
  15. You can store scrambled eggs in the refrigerator for 2 to 3 days.
  16. Prepare the rice and shape it into a disc to create sushi rolls. ≈ 10 min
  17. Place the sushi pieces in the center of the egg pancake, which will be used to wrap them. ≈ 3 min
  18. Fold the edges of the omelette to cover the rice. ≈ 3 min
