This traditional Bengali yogurt is made with boiled milk and a small amount of yesterday’s yogurt as a starter. The clay pot it’s traditionally stored in gives it a distinctive texture.

Directions

  1. Bring the milk to a boil in a pot.
  2. Let it cool down by half, until it is lukewarm, then pour it into a ceramic or glass pot.
  3. Add the yogurt as a leavening agent and gently mix with a spoon to ensure it is evenly distributed. ≈ 4 min
  4. Cover the pot and leave it in a warm place for 8 to 12 hours. Add a little extra time if the weather is cold.
  5. Once the yogurt has set, place it in the refrigerator and serve it cold.
