Small, snow-white marzipan rolls, filled with a custard made from egg yolks, are a traditional Spanish treat for All Saints' Day.
“Huesos de santo,” or “huesitos,” are small sweets that are eaten in Castile during All Saints' Day. The most traditional ones are filled with a custard made from egg yolks.

Directions
- Prepare a syrup with 100 ml of water and 200 g of sugar, then gradually add the almond flour while stirring. Let the mixture rest while preparing the cream.
- Prepare a second syrup in a small container with 50 ml of water and 100 g of sugar, then add the beaten egg yolks. Place this container in a large pot of water, ensuring that the water does not enter, and heat over a double boiler. Cook without boiling, remove from the heat as soon as the cream thickens, then let it cool.
- Spread the almond paste evenly on a flat surface, cover it completely with powdered sugar, and cut it into squares. Wrap each square around a pencil, with the sugared side facing inwards, to prevent it from sticking, to form cylinders. If desired, mark them with lines using a fork. Coat them again with powdered sugar to make them white. ≈ 8 min
