Directions
- Melt the butter over medium heat, but do not let it boil, then set it aside.
- In a bowl, whisk together the eggs, water, and vinegar. ≈ 4 min
- If you are confident, you can place the pot directly on the stove; otherwise, a safer option is to place it in a larger pot filled with hot water (a bain-marie). ≈ 3 min
- Whisk vigorously, without ever stopping. ≈ 4 min
- As soon as the sauce thickens, remove it from the heat quickly.
- Let it cool to the temperature of the melted butter.
- Pour evenly distribute the butter over the yolks while whisking vigorously. ≈ 3 min
- Season to taste with cayenne pepper and lemon juice. ≈ 2 min
- Serve immediately. ≈ 2 min
