Gürzə de Şəki is a small type of Azerbaijani pasta, filled with raw lamb, onion, and mutton fat. It is served in a broth with cilantro and a garlic-based vinegar.

Directions
- Chop the lamb meat, the fat from the tail, and the onion to create the filling. ≈ 8 min
- Knead the flour into a firm dough, roll it out to a thickness of 1 mm, and cut out 5 cm diameter discs. ≈ 10 min
- Place the raw filling in the center of each disc, then fold it over, with the seam facing upwards, leaving one end open. ≈ 3 min
- Cook the gürz in water or in broth.
- Serve them in their broth, garnished with cilantro, alongside a separate garlic-infused vinegar.
