The uvaia is a Brazilian fruit with a tart and very fragrant flavor. Its pulp yields a smooth jam, which is made by blending, straining, and then slowly cooking with sugar, and should be stored in the refrigerator.

Directions
- Combine the pulp with the water in a blender. ≈ 4 min
- Strain the mixture, then add the sugar. ≈ 3 min
- Place the mixture in a large pot and cook over medium heat until it reaches the jam consistency: when you lift the spoon, the last drop should take a long time to fall (this is just one of the indicators of when it’s ready).
- Pour servir, pour each portion, pour each jar, then store in the refrigerator.
