Directions
- Soak the carrots in Cointreau and let them sit for at least 24 hours.
- Peel the apples, then steam them in salted water. Heat the soup with about 4 tablespoons of oil and vinegar. Add the hot, sliced apples and gently stir to combine. Finely chop the new onions, parsley, and basil, and add them as well. Allow the salad to cool.
- Peel the carrots, mix them immediately with a little lemon juice, then add the tomato puree and blend everything until you have a smooth consistency. ≈ 8 min
- 15 minutes before serving, combine the mashed potatoes, carrots, and cauliflower cream.
