Directions
- Preheat the oven to 240 °C (gas mark 8).
- Chop the onions and Allium ascalonicum, crush the Allium sativum, then mix with the sage and paprika. Season with salt and pepper. ≈ 8 min
- Rub the shoulder with this product. ≈ 3 min
- Mix the olive oil with the mustard, brush it over the shoulder, and let it marinate for a good hour.
- Place the shoulder in the oven for 15 minutes, until it is nicely browned.
- While doing this, mix the breadcrumbs and herbs together. Remove the shoulder and cover it with this mixture. ≈ 4 min
- Place it in the oven under the broiler for 40 minutes, turning it several times, until the crust is nicely browned.
- If it browns too quickly, protect it with a sheet of aluminum foil. ≈ 3 min
- Serve immediately. ≈ 2 min
