Greek rice pudding with lemon and vanilla
A creamy Greek rice pudding, gently simmered with lemon zest and vanilla, and served very cold after being chilled.
This Greek dessert, known as “risogalo,” is made with very few ingredients. Cooked over low heat, the rice becomes soft and creamy, with a lemon flavor.

Directions
- Heat the milk with the vanilla, sugar, and lemon zest.
- When the milk is about to boil, reduce the heat to the lowest setting and pour in the uncooked rice. The milk should come to a gentle boil. Stir very little: at low temperatures, the rice will stick. Be especially careful to avoid lumps and a skin forming on the milk. ≈ 4 min
- Once the milk has been absorbed, after approximately half an hour (and never less than twenty minutes), pour the mixture into a container, let it cool, and then refrigerate.
- Serve chilled, and stir before serving. ≈ 2 min
