Directions
- Wash the Gordal olives and grind them using a mortar and pestle, making sure that the pulp doesn’t completely separate from the pit. ≈ 4 min
- Place the olives in a container filled with water for twelve hours. ≈ 3 min
- Prepare the glass jars: place the olives at the bottom, then add the other ingredients alternately, until the jar is full. Add salt, vinegar, and water, then seal. ≈ 3 min
- Store in a cool, dry place, away from strong odours. Allow 15 days for the salt to work its effect. ≈ 3 min
