Directions
- Finely mince the Allium ascalonicum and Allium sativum, and sauté them until cooked through. Then, drain them of the oil.
- Roast the peanuts without oil until their skins start to separate, then blend them.
- Soak the anchovies in water for 10 minutes to make them easier to clean.
- Chop the wild ginger into thin, small slices. ≈ 8 min
- Fry the wild ginger until it is dry, but be careful not to burn it.
- Do the same with the anchovies. ≈ 3 min
- In a bowl, combine the fried peanuts, anchovies, shallots, garlic, and wild ginger. ≈ 3 min
- Thoroughly mix all the ingredients, then add the salt and glutamate to taste. ≈ 4 min
- Once everything is well mixed, pour it into a jar: the condiment is ready to use. ≈ 2 min
