Gongbao jiding is a traditional Chinese dish that combines sweetness and spiciness. Originating from Sichuan cuisine, this dish is known for its complex flavors and the crunchy texture of the cashew nuts.

Directions
- Cut the chicken into slices about 1.5 cm wide, then cut these slices into small cubes. ≈ 8 min
- Place the chicken cubes in a small bowl and mix them with the marinade.
- Peel and finely chop the garlic and ginger, then chop the new onions into pieces (about the same length as their width, so they match the size of the chicken pieces). ≈ 8 min
- Cut the dried chili peppers in half, or into pieces about 5 cm long. ≈ 8 min
- Next, remove as many seeds as possible – it is recommended to wear gloves for this step. ≈ 3 min
- Combine the sauce ingredients in a small bowl. ≈ 4 min
- If you taste the sauce with your finger, you will be able to experience the sweet and sour flavors that are characteristic of the Gong Bao dish. ≈ 2 min
- Season the wok and then add two tablespoons of soy sauce.
- Then, heat gently.
- When the oil paint is warm, but not yet smoking, add the hot pepper and Sichuan pepper. ≈ 3 min
- Have them come back quickly until they are crispy and the oil paint is fragrant. ≈ 3 min
- Make sure not to burn the spices (remove the pan from the heat if necessary to prevent overheating).
- Quickly add the chicken and cook it over low heat, stirring constantly.
- As soon as the chicken pieces start to separate, add the ginger, garlic, and fresh onions. ≈ 2 min
- Continue to stir for a few minutes, until the newly added ingredients release their aroma and the chicken is fully cooked (taste a larger piece to check). ≈ 4 min
- Combine the sauce and pour it into the wok, while continuing to stir and mix.
- As soon as the sauce begins to thicken slightly and takes on a glossy appearance, add the peanuts, mix well, and serve.
